How to make Rocky Road Candy
Put chocolate chips and butter into a very large microwavable bowl. Microwave and stir until the chocolate is melted and mixed with the butter.
Add the sweetened condensed milk and stir to mix.
Add mini marshmallows and peanuts. Carefully stir them into the melted chocolate mixture. The bowl will be full, carefully fold the chocolate mixture up from the bottom. Continue to fold until all the marshmallows and peanuts are coated in chocolate.
Line a sheet pan with parchment paper and spray with nonstick cooking spray. Pour the Rocky Road Candy mixture into the pan and evenly spread the mixture. Oil your hand and gently press down on the candy to help it hold together.
Place the sheet pan in the refrigerator and let it cool completely and harden, roughly 1 to 2 hours.
Cut 6 rows on the short side and 9 rows on the long side of your half sheet pan. This recipe makes 54 roughly 2×2 squares. You can cut each square in half for smaller pieces if you’d like.
