Miso Salmon

This Miso Salmon recipe uses a marinade including Miso. Miso is a traditional Japanese seasoning used throughout Asian cuisine. It is generally salty and tangy. It adds a savory umami flavor to soups, dressings and marinades. There are a variety of colors of miso paste to choose from.  The darker the miso paste, the more intense the flavor. For a mild, tangy flavor, I usually choose white miso paste.

This recipe uses a quick and simple marinade to give great flavor to salmon.  If you’ve never tried cooking with miso, this is a great place to start. Also check out my recipe for Creamy Ginger Miso Salad.

What you need

Salmon

Rice wine vinegar

White miso paste

Honey

Soy sauce

Ginger

Sesame oil

Green onion and/or cilantro

How to make the Miso Salmon

This recipe calls for 4 salmon fillets.  If you start with a whole fillet of salmon, you may have 5 or 6 pieces and the marinade will be enough for those additional pieces.  Make sure there are no pin bones in your salmon by running your fingers across the fillets.  If you find any bones, use tweezers to pull them out.

The marinade couldn’t be easier.  Whisk together the rice wine vinegar, white miso paste, honey, soy sauce, grated ginger and sesame oil. Put the salmon fillets in a bowl or platter and top them with half the miso marinade. Reserve the rest of the marinade for serving.

You can marinate the salmon for anywhere from 20 minutes to an hour. Miso is salty, so I wouldn’t marinate longer than an hour.  If you’re going to marinate for a short period of time, up to 20 minutes, cover and marinate on the counter.  To marinate longer, cover and place in the refrigerator.  When ready to cook, let them sit for 20 minutes on the counter.

   

Preheat your oven to 400 degrees.  Line a baking sheet with foil and spray with nonstick cooking spray.  Place the salmon fillets on the baking sheet and bake for 10 minutes.  Then turn the oven off and start the broiler.  Broil for 2 to 3 minutes until golden and bubbly on top.

Move to a plate and garnish with green onions and/or cilantro. Serve with the extra marinade on the side.

  • 4 salmon fillets
  • 3 tablespoons rice wine vinegar
  • 3 tablespoons white miso paste
  • 1 tablespoon honey
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon grated ginger
  • 1 tablespoon sesame oil
  • Green onion
  • Cilantro
Directions
  • Step 1 Whisk together rice wine vinegar, miso paste, honey, soy sauce, ginger and sesame oil.
  • Step 2 Check salmon for bones and remove any you find.
  • Step 3 Marinate the salmon fillets in half of the marinade, reserving the rest for serving. Marinate for up to 30 minutes on the counter. Or marinate up to 1 hour in the refrigerator. Then let sit for 20 minutes on the counter.
  • Step 4 Preheat the oven to 400 degrees. Line a baking sheet with foil and spray with nonstick cooking spray. Place the salmon fillets on the baking sheet.
  • Step 5 Bake for 10 min. Turn the oven off and start the broiler. Broil for 2-3 minutes.
  • Step 6 Serve with green onion and cilantro garnish and extra marinade on the side.
