Crockpot Corned Beef and Cabbage is the perfect meal for St. Patrick’s Day. Corned beef, cabbage, potatoes and carrots are delicious cooked low and slow. This dish is easy to put together and cooks itself while you make an Irish Whiskey Cake.
What you need
Corned beef
Creamer potatoes
Carrots
Cabbage
Onion
Bay leaves
How to make Crockpot Corned Beef and Cabbage
Place your corned beef into the crockpot and top with the seasoning included in the package. Wash the potatoes. Peel and rise the carrots, then cut into 1 to 2 inch segments. Cut half an onion into wedges. Tuck the vegetables around the sides of the corned beef. Add three bay leaves. Add water until the corned beef is almost covered, about 3 cups.
Set your crockpot to either 8 hours on low or 4 hours on high. After the time has elapsed, rinse a half head of cabbage and cut into wedges. Add the wedges to the top of the crockpot over the corned beef.
Now set your crockpot for another 2 1/2 to 3 hours on high. You’ll know when your corned beef is ready when it easily twists loose with a fork. My corned beef was just under 3 1/2 pounds and it needed another 2 1/2 hours on high.
