Creamy Ginger Miso Salad
Ingredients
- For Salad:
- 4 cups chopped lettuce
- 1 cup sliced carrots
- 1 cup sliced bell pepper
- 1 cup sliced celery
- 1/4 cup cilantro leaves
- 1/2 cup whole cashews
- 1/2 cup crispy wontons
- For Dressing:
- 2 teaspoons grated ginger
- 1/4 teaspoon garlic powder
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 teaspoon sesame oil
- 1 tablespoon white miso paste
- 2 tablespoons tahini
- 2 tablespoons mayonnaise
- 2-3 tablespoons water
Directions
- Step 1 Wash and chop salad vegetables. Pat dry and arrange in a bowl or platter with nuts and toppings.
- Step 2 Add all dressing ingredients to a mason jar and shake.
