Cranberry Orange Bread with Cranberry Butter

Cranberry Orange Bread is a holiday classic, made better with the addition of Cranberry Butter.

 

What you need

 

Cranberries

Pecans

Oranges

Flour

Sugar

Baking powder

Baking soda

Salt

Shortening

Egg

Butter

 

How to make Cranberry Orange Bread

Chop the cranberries and nuts and set aside. Zest the two oranges. This will give you about a tablespoon of orange zest. Juice the oranges and measure out 3/4 cup of orange juice. Set aside.

In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda and 1 teaspoon of the salt. Add the orange zest, orange juice, well beaten egg and shortening. Mix well. Next fold in 1 1/2 cups of the chopped cranberries and the chopped nuts.

Place the batter into an oiled loaf pan. Bake at 350 degrees for 65 to 70 minutes, until a toothpick near the center comes out clean.

Cool for 20 minutes before slicing.

 

How to make Cranberry Butter

Add the remaining 1/2 cup of chopped cranberries to 1 stick of softened butter, along with the remaining 1/4 teaspoon of salt. Mix well. Serve alongside the Cranberry Orange Bread.

  • 1/2 cup chopped pecans
