Chocolate Dipped Strawberry “Carrots” in Dirt Cake

Chocolate Dipped Strawberry “Carrots” in Dirt Cake is just what you need on your Easter table. This dish looks fantastic and tastes even better.

 

For the Chocolate Dipped Strawberry “Carrots”

 

You’ll need about a dozen large strawberries and a bag of orange melting chocolates

Rinse and gently pat dry the strawberries. Make sure you leave the green tops on as these will be the carrot tops.

Place a cup of melting chocolates into a medium bowl. Microwave 1 minute, then stir. Microwave in 30 second increments until completely smooth, stirring after each 30 second increment. As you use the melting chocolate, add additional cups and repeat to melt them. If the melting chocolate becomes hardened, you can microwave it again.

Dip each strawberry into the melting chocolate and place it on a piece of waxed paper to harden. Let dry, then drizzle on more melting chocolate in a sideways motion using a fork. Set aside to set completely while you make the dirt cake.

 

 

For the Dirt Cake

Use a new, clean planting pot. This recipe for dirt cake fills an 8 inch flower pot. You may need more or less depending on the size of your planter. You can half the recipe if your planter is on the small side, like mine was. Or make one and a half times the recipe if you are using a large pot for a crowd.

Cookie mixture

2 to 2 1/2 pounds of chocolate sandwich cookies with the filling. Break them into pieces into your food processor. Then crush process until the mixture resembles potting soil.

You’ll need about 12 gummy worms to add to the cookie mixture when finishing the dirt cake.

Pudding mixture

8 ounce tub of whipped topping

2 small vanilla instant pudding mixes

3 1/2 cups milk

Mix well and set aside.

Butter mixture

1/2 cup softened butter (1 stick)

1/2 box powdered sugar (1 3/4 cups)

8 ounce softened cream cheese

Blend well and set aside

 

Fold the pudding and butter mixtures together gently. Now it’s time to fill your planter. Start with a 1 inch layer of cookie mixture on the bottom. Put 2 or 3 gummy worms in each cookie layer. Add a layer of pudding, then cookies and repeat layering. Make sure you end up with a layer of cookies on top. Put gummy worms in all the cookie layers and save a few for the surface of the planter.

Now place the strawberry carrots on top of the dirt cake as if in a garden. Add some gummy worms on top of the dirt cake.
