Chicken Apple Pecan Salad is great for lunch or dinner. This recipe also works well as meal prep for lunches. If you’re working from home, put each item in it’s own container and cut the apple as you need it so it won’t get brown. Or you can make this into 4 salads ready to eat. Put the nuts in a sandwich bag or plastic wrap so that they don’t get soft. Cut an apple into quarters, rub it with lemon juice and wrap it tightly with plastic wrap. Then you can slice it as you eat the salad. Package the dressing on the side.

How to make Chicken Apple Pecan Salad
Rub two boneless, skinless chicken breasts with oil and sprinkle them with salt and pepper. I used an indoor grill with a top that cooks both sides at once and it took 8 minutes. If you’re using an open grill pan, cook them for 5-6 minutes per side. Or you can put them under the broiler for about 5 minutes per side. Whichever way you cook them, they need to register 165 degrees at the thickest section of the breast. Let them rest for 10 minutes while you prepare the other ingredients. Then slice them into strips.
Arrange the spring mix, one sliced apple, 1/2 cup pecans, 1/2 cup feta cheese and the chicken strips in a salad bowl or platter.
How to make the dressing
Add all the dressing ingredients to a mason jar and shake well. Serve the dressing on the side.

- 2 boneless, skinless chicken breasts
- 4 cups spring salad mix
- 1 apple, sliced
- 1/2 cup pecans
- 1/2 cup feta cheese
- 1 tablespoon light oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- For the dressing
- 7 tablespoons light oil
- 5 tablespoons lemon juice
- 4 teaspoons honey
- 4 teaspoons dijon mustard
- 1 teaspoon salt
- 1/2 teaspoons pepper
Directions
- Step 1 Rub the chicken breasts with oil and salt and pepper. Grill until the thickest part of the breast reaches 165 degrees, about 5 minutes per side. Let rest 10 minutes, then slice into strips.
- Step 2 Arrange the spring salad mix, sliced apple, pecans, feta cheese and chicken in a salad bowl or platter.
- Step 3 Add all the dressing ingredients to a mason jar and shake well. Serve the dressing on the side.
