Cajun Macaroni Salad is a spicy version of the all American classic. Perfect as a side dish for Southern sandwiches or spicy barbecue.
I added some spice to macaroni salad when I was making shrimp poor boy sandwiches. Creamy and slightly spicy with the addition of diced jalapeno and Cajun seasoning. Perfect for spicy barbecue and pulled pork sandwiches.
What you need
Elbow macaroni
Mayonnaise
Sour cream
Lemon juice
Red onion
Bell pepper
Jalapeno
Cajun seasoning
Pepper
Green onions
How to make Cajun Macaroni Salad
Cook the elbow macaroni according to the package directions. Rinse and drain.
While the pasta is cooking, dice the onion, bell pepper and jalapeno. I used green bell pepper and red onion. You could use sweet onion and any color bell pepper. I am using lots of jalapenos from our garden. We have so many of them! They are ripening and turning red on the vine.
In a medium mixing bowl, add the mayonnaise and sour cream. Add the onion, bell pepper, jalapeno, Cajun seasoning, pepper and lemon juice. Stir to mix and give it a taste. Depending on the Cajun seasoning, you may want to add salt to taste. Some varieties are pretty salty, so try it first.
Next, add the elbow noodles to the bowl. Stir to mix and wipe the sides of the bowl clean. Top with sliced green onions and serve.

- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon lemon juice
- 1/4 cup diced red onion
- 1/4 cup diced bell pepper
- 1 Jalapeno, seeded and minced
- 1/2 teaspoon Cajun seasoning
- 1/4 teaspoon pepper
- Salt to taste
- 3 green onions, sliced
Directions
- Step 1 Cook the elbow macaroni according to the package directions, about 12 minutes. Rinse and drain.
- Step 2 While the pasta is cooking, dice the onion, bell pepper and jalapeno.
- Step 3 In a medium mixing bowl, add the mayonnaise and sour cream. Add the onion, bell pepper, jalapeno, Cajun seasoning, pepper and lemon juice.
- Step 4 Stir and taste for salt. Depending on the Cajun seasoning, you may want to add salt. Some varieties are pretty salty, so try it first.
- Step 5 Next, add the elbow noodles to the bowl. Stir to mix and wipe the sides of the bowl clean.
- Step 6 Top with sliced green onions and serve.
