Breakfast Burritos are tasty, easy to make and great to have on hand. Make them as meal prep, for camping, or even for lunch!
The flavor combinations are endless. Make them with breakfast sausage (as pictured here), bacon or just with eggs and cheese. Use cheddar, pepperjack or any of variety of cheese. Add caramelized onion, roasted garlic, chipotle or any other flavor that you love.

How to make Breakfast Burritos
In a medium pan, brown the breakfast sausage. Then drain it on a paper towel. Pour out the sausage drippings, but keep what is left coating the pan. Whisk the eggs with salt and pepper and scramble until they are not quite set. Turn off the heat. They will continue to cook until done.
As the sausage and eggs are cooking, slice the avocado into quarters, then cut each quarter into 3 slices. Slice the serrano pepper(s), then mince. You can use 1 or 2 serrano peppers. Or use just a half, or leave them out all together if you don’t want heat.
Now you can start assembling the Breakfast Burritos. Lay out 4 burrito sized flour tortillas. If the tortillas are smaller, they will be difficult to roll up. Add scrambled eggs, sausage and tater treats. Then add shredded cheese, serrano peppers, avocado and salsa.
Now you’re ready to roll up the burritos. Take these steps to keep your rolled burritos intact.
1 – Fold the side of the tortillas in.
2 – Fold the bottom of the tortilla up to meet the top edge.
3 – Pull the upper half of the tortilla back toward you, pushing all the ingredients into a log.
4 – There is a flared edge above the burrito. Tuck the flared sides in. This will keep the burritos from leaking.
5 – Finish rolling to form the burrito.
All the sides are nicely tucked in. Make sure you don’t overfill your burritos or they will be too full to make these tucks and folds. With smaller tortillas, such as soft taco size, there isn’t enough tortilla to make the tucks and folds. And guess what happens then. Your salsa drips out onto your shirt.
Heat the burritos in the microwave for about 1 minute. Or you can grill them in a small pan to get a crusty exterior. Serve with extra salsa for dipping. If you’re making these for meal prep, wrap them in plastic wrap and keep them in the refrigerator. They will need 1 to 2 minutes to reheat in the microwave.
These Breakfast Burritos are perfect for camping. I wrap them in foil so they can be placed on coals to heat up or placed directly on your portable grill. When I take food camping, I seal it in my Food Saver. That way it doesn’t get wet in the ice chest. Regular zipper bags can and do take on water.
