Bacon Wrapped Asparagus

Bacon Wrapped Asparagus is a new favorite at our house.  We all love asparagus and bacon, so it’s no wonder we all love this dish. The first time I tried bacon wrapped asparagus, I used pepper for the seasoning. Then I made a change. I have a recipe for pan fried asparagus that is finished with a squeeze of lemon juice. I also love peppered bacon. The next time I seasoned with lemon pepper and have never gone back. Everyone already loved bacon wrapped asparagus, and the addition of lemon pepper sealed the deal. Simple and only 3 ingredients, you can’t beat that for a great dish.

How to make Bacon Wrapped Asparagus

 

Trim the woody ends of the asparagus off. Rinse and place them on a paper towel to dry. The size of the asparagus will determine how many you wrap into each bundle. If you have small, thin asparagus, you might have four inside each slice of bacon. I have made the these with larger, thicker stalks of asparagus and wrapped two spears inside each slice of bacon. The bundles pictured here have 3 spears of asparagus inside each of the 8 slices of bacon.

With thick spears of asparagus, no matter how you’re planning to cook them, it’s best to peel the bottom of the spears. The outside layer of the lower spear is what causes the stringiness that makes the last bite of asparagus tough. Use a vegetable peeler to peel away the outer layer of the end of the spears. It only takes a few minutes and then the whole asparagus spear is tender and easy to eat. This is necessary for thin or even medium spears of asparagus.

Lay out a slice of bacon and start wrapping the asparagus below the tips. One slice should wrap the spear nearly to the bottom. As you wrap them, tuck the ends of the bacon under the bundle. This way you won’t need to bother with toothpicks to hold them in place.

   

Wrap all 8 bundles and sprinkle them with a teaspoon of lemon pepper. Lemon pepper also has salt in the mix, so don’t use too much or they’ll end up too salty.  Bacon also adds saltiness.

Place the bundles on an oil rubbed baking sheet.  Bake at 400 degrees for about 30 to 35 minutes, or until the bacon is nice and brown.
