Avocado Toast is not only delicious, it’s a quick and easy breakfast. Add an egg and you’re all set until lunch.
I love how versatile this dish is. It can be as simple as toast and avocado alone. Or you can add any number of items to make it even better.
My favorite version includes a fried egg and everything bagel seasoning.
You can add a slice of ham, cheese, cream cheese, tomato, red onion, green chilis, salsa, jalapenos . . .
The possibilities are endless. You can make your favorite, or make it different every time. Whatever you put on top of yours, it will keep you going all morning.

How to make Avocado Toast (with an egg)
Start with the avocado and the toast so that you’ll be ready for the egg when it is cooked.
Cut the avocado in half. Use a spoon to scoop out the half without the seed. Slice the avocado.
Toast a slice of whole grain bread. Top it with the avocado and spread over the toast somewhat. Sprinkle the avocado with half of the everything bagel seasoning.
Melt the butter in a small pan, add the egg and sprinkle with a small amount of salt and pepper.
Cook for about a minute on the first side, then break the yolk with your spatula and flip it over. Sprinkle the second side with a small amount of salt and pepper. Let it cook for another minute, then turn off the heat.
Place the egg on top of the avocado and sprinkle with the remaining everything bagel seasoning.

- 1 slice whole grain bread
- 1/2 avocado
- 1 egg
- 1 teaspoon butter
- 1 teaspoon everything bagel seasoning
- salt and pepper to taste
Directions
- Step 1 Start with the avocado and the toast so that you’ll be ready for the egg when it is cooked.
- Step 2 Cut the avocado in half. Use a spoon to scoop out the half without the seed. Slice the avocado.
