Chicken salad is delicious and versatile. It is also a quick and easy way to use leftover chicken or rotisserie chicken. I have made chicken salad using a lot of flavor profiles. Sometimes the flavor of my chicken salad is based on what I have in the refrigerator. It might be the classic celery and onion. It might be walnuts and grapes. One day, the only item I had that would lend crunch was a bell pepper. I had basil in the garden. Instantly bell pepper and basil was my favorite chicken salad. The lemon dressing on this salad gives it a bright flavor as well. Flaky butter croissants are the perfect partner to this chicken salad. I hope you’ll love it as much as I do.
How to make Chicken Salad Croissants
Dice the bell pepper and basil. Any color bell pepper will work well.
Cut the chicken into bite sized pieces. You can use any type of chicken you have, thighs or breasts. You could also use leftover turkey. I used two breasts from a rotisserie chicken.
To make the dressing, mix the mayonnaise, lemon juice, celery seed, salt and pepper. Mix the dressing with the chicken, bell pepper and basil.
Pile the chicken salad into a croissant and enjoy!

Ingredients
- 2 cooked chicken breasts (22oz), chopped
- 1/2 red bell pepper, diced
- 3 sprigs basil leaves, chopped
- 3/4 cup mayonnaise
- 1 tsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. celery seed
Directions
- Step 1 Mix mayonnaise, lemon juice, celery seed, salt and pepper in a large bowl
- Step 2 Add chicken, bell pepper and basil. Stir to mix.
- Step 3 Serve on croissants.
