How to make the Mini Romaine Wedge Salad
Cut two heads of mini romaine (Little Gem) lettuce in half. Rinse and drain well while you cook the bacon. Cook one pound of bacon. Slice 20 cherry or grape tomatoes in half. This salad is as easy as arranging these ingredients on 4 salad plates and serving blue cheese dressing on the side.

Ingredients
- 2 heads of mini romaine (Little Gem) lettuce
- 20 cherry or grape tomatoes
- 1 package crumbled blue cheese
- 1 pound bacon
- 1 jar blue cheese dressing
Directions
- Step 1 Cut two heads of mini romaine (Little Gem) lettuce in half. Wash and drain well while you cook the bacon.
- Step 2 Cook one pound of bacon.
- Step 3 As the bacon cooks, slice the tomatoes in half.
- Step 4 Arrange the lettuce, tomatoes, bacon and blue cheese on 4 salad plates.
- Step 5 Serve with blue cheese dressing on the side.
