Ginger
Cinnamon
Cloves
Nutmeg

Baking soda

How to make Ginger Molasses Cookies
Mix together flour, ginger, cinnamon, cloves, nutmeg, salt and baking soda. Set aside. Cream butter and sugar in the bowl of a stand mixer. Add eggs and combine. Next add orange juice and molasses and mix well. Add the dry ingredient mixture in three batches, mixing as you go.
Roll out the dough on a floured surface to create a rectangle shape. Flour the surface, the dough and the rolling pin to avoid sticking. Once your dough is rolled flat, roll over it with a well floured embossed rolling pin. You should be able to see the embossed design. Cut out with a 3 inch scalloped cookie cutter. Re-roll the dough, and repeat the process until all the dough is gone. Place the cookies on baking sheets and refrigerate for 30 minutes. This recipe makes 4 dozen cookies.
Bake in a 325 degree oven for 10 minutes. Cool completely. then brush with powdered sugar to enhance the embossed design.
